use of high-fructose corn syrup (HFCS) in the US, as found in soft drinks
and other foods, mirrors the rapid increase in obesity by contributing
to increased energy intake and weight gain, and enhancing caloric over-consumption.
Sweet corn-based syrups now represent close to one-half of the caloric
sweeteners consumed by Americans. HFCS has become a favorite substitute
for sucrose not only in carbonated beverages, but also in baked goods,
canned fruits, jams and jellies, and dairy products.
The increase in consumption of HFCS has a relation to the epidemic of
obesity, and its over-consumption in calorically sweetened beverages
has played a role in the epidemic of obesity. The digestion, absorption,
and metabolism of fructose differ from those of glucose. Unlike glucose,
fructose does not stimulate insulin secretion or enhance leptin production.
Because insulin and leptin act as key signals in the regulation of food
intake and body weight, dietary fructose may contribute to increased
energy intake and weight gain.

Now that the
news is out that low fat and low carbohydrate diets help people lose
weight and keep it off to the same degree, people might be saying, “How
do I eat healthy?” Here are four suggestions that go a long way
toward improving your health and avoiding diet-caused decline.
1) Look for a short ingredient list. The longer the list, the less nutritious
the food is.
2) Look at the fiber content. A healthy food has 1-2 grams of fiber
per 100 calories.
3) Avoid high fructose corn syrup. It has no food value and helps you
get fat—empty calories.
4) Avoid hydrogenated fats. These are added as a preservative in baked
goods and to harden oils that are usually liquid at room temperature.
They lead to heart problems. Check your labels on peanut butter, ice
cream, backed and processed foods, margarine.
